A busy and challenging first month for our young aspiring chefs of the Italian Food Academy in Nairobi. The 18 guys selected to attend the pilot course of the Academy are learning all the techniques and secrets to prepare 200 recipes of high Italian culinary tradition.
They already showed their skills at the opening date, presenting a menu worthy of a multi-starred chef: tortelli with ricotta and spinach flavored with thyme, fried dumpling, lasagne with Pesto, fresh meringues, baskets of pastry and fruit, all with the scent of high Mediterranean cuisine.
The course will end at the end of November with the graduation ceremony.
The Italian Food Academy is the first specializing school of Italian cooking for the guys of Nairobi slums.
